I'm trying to smooth out the lines when I plot. How / where do I adjust how many faces curves have when plotting? I can make them smoother by using REGEN, but the smoothness doesn't seem to hold into the plot command.

Hello!
What version of NanoCAD are you using?
Can you describe a little bit more:
- what is the measurements of object you want to plot?
- what is the value of symbol scale?
Is it possible to attache here at least screenshot or even better - your drawing?

Nanocad 5

It's a .5 inch circle.

When I zoom in I can see the induvial pen strokes as straight lines. I know this has to be, but how to I adjust how many sides a circle has when plotting?

Zoom intended to view, not to scale objects.
If you need to plot/print bigger version of circles you have, maybe using SCALE command is better option?
Call SCALE in command line, select objects you need to plot and set appropriate value of scaling to make them big enough and then plot the result.
