I am a new guy here.

Could anyone tell me if it is possible to disable the entity highliting when you move the cursor over it. So far, I wasn't able to find the setting for it.

Yes, it's possible. You should change the value of the SELECTIONPREVIEW system variable.
Work with command line:
Command: setvar
Enter variable name or ?: SELECTIONPREVIEW
SELECTIONPREVIEW <2>: 0
